Solaris is a white grape that thrives in cooler climates making it a good choice for our Norfolk soils. It is often over-looked as drinkers choose Bacchus thinking they’re opting for a safer bet, but our first vintage of this wine - 2022 - won Decanter Silver medal, so it’s a wine that’s well worth discovering.
Very pale in colour, but with intense aromas of tropical fruits and underlying citrus notes as well as hints of honeysuckle. Light-bodied, there is a hint of residual sugar, but this is balanced out with bright acidity and zesty and tropical flavours. Clean, refreshing and a lingering fruity and floral finish.
Food matching: If you’re wondering what to pair Solaris with, we think its aromatic style makes for a great match with seafood, fresh salads, and even spicy Asian dishes. Equally why not try it with soft cheeses like goat's cheese.
Winemaking: Barrel fermented and aged for 9 months in Hungarian Oak barrels. The wine then undergoes malolactic fermentation to lift the acidity and add a touch of creamy texture. It is then filtered and then bottled.
